There are so many versions of vegan lime pie, it can be hard to pick one. This one is fairly fast, and easy. A family favorite! PS. Add a little macha or moringa powder to your filling for a greener shade.

Crust assembly

  1. All filling ingredients in food processor.  Don't over process or you'll have nut butter.  Add a dash of water or coconut milk to moisten, if needed.  Press into Pyrex pie pan (moistened fingers help.  Place in freezer while preparing filling.

Filling Assembly

  1. Blend (almost) all ingredients on high until smooth and creamy.  Blender works best.  Add coconut / lecithin mixture last.  Pour into crust and chill 1 hour in freezer or 4-8 hours in fridge.

Topping

  1. Scoop out chilled, hardened cream.  Reserve liquid (coconut water).  Whip.  Optional to add a splash of maple and vanilla for flavor.  Add any amount desired to top of pie.  I add more to each plated piece for deliciousness, plus some added lime zest for beauty.
